The Story

Filleting knife with a characteristically curved blade that is both thin and flexible to be able to cut evenly under the fish's skin along the spine. The handle of this filtering knife is designed to be used comfortably over a long period of time. The design is made to fit well in the hand and with an angle that provides optimal cutting properties.

EGO is designed in Norway and approved by the Danish National Chefs Association.
